Paloma 2016 Cabernet Sauvignon, Napa Valley

Add to Wishlist

Extremely limited  Paloma 2016 Cabernet Sauvignon. This tiny winery on Spring Mountain rocketed from obscurity to collector status overnight when the 2001 vintage was chosen as Wine Spectator's 'No. 1 Wine in the World' and ever since has been hard to get.

The 2016 Paloma Cabernet Sauvignon is 100% pure Cabernet Sauvignon. It is fermented in French oak—33% new barrels —for 18 months before being bottled in the spring, then bottle-aged for an additional 30 months before release.

Jim and Barbara Richards purchased their property on Spring Mountain in 1983 and planted a vineyard, built a home and later a winery with their own labor and help from friends and family. The hard work paid off as their Merlot was named Wine Spectator's "Wine of the Year" in 2003. The honor earned them a cult following and each vintage is usually only available through allocation.

Tasting Notes: The 2016 Paloma Cabernet Sauvignon displays a seductive nose of dark cherry, raspberries, anise and a touch of nutmeg.  In the mouth, the wine is silky smooth and very lush, soft on the entry and rewarding the taster with an impressively long finish.  Surprisingly approachable for a young Cabernet made from Spring Mountain fruit, the 2016 Paloma Cabernet will offer immediate gratification. Enjoy this beauty with a hearty meal of rich, creamy cheeses, wild game and a decadent chocolate dessert.
